The skin starts nearly orange (with golden flesh) & it lightens a bit in color when cooked but holds its sweetness. The best part is that there is no red beet juice to drip & ruin things! Burpee’s Golden has green leaves with yellow stems that make excellent greens to use raw in salads or cooked.
