The 6 - 7" pods are a lovely dark purple color, & they stick up above the foliage, making them both easy to admire & to harvest. Each pod contains 8 - 10 peas with pinky-purple eyes that look more maroon because of beige background. Purple Pinkeye Cow Peas mature early, & can be enjoyed fresh, dried, canned, or frozen in any of the wonderful ways one enjoys peas or beans.
